Caught in the rush of everyday living?  Even the most health-conscious consumer would agree that healthy eating and cooking are quite a challenge!  After a hard day of work, we hurry to the supermarket, grabbing familiar foods that are quick and easy to prepare, but are probably not the healthiest food choices.

After the publication of my first book, Easy Healthy Cooking with Four Ingredients, I became aware of just how important easy, quick and healthy recipes are.  Over and over again, people have said, “Four healthy ingredients?  That’s what I need!”

When I began researching nutrition requirements for diabetics, it became clear to me that the recommended foods for people with diabetes are essentially the same healthy foods everyone needs.  The challenge was to develop recipes using smart, convenient products designed for people on the go, yet still be low in sugar and refined carbohydrates, sodium, fat, cholesterol and calories.  Impossible?  Never!

Reading food labels and looking for smart new products is a great idea, but it sometimes takes more time than we have.  That hungry family waiting at home is the more urgent need, not roaming the aisles of the supermarket.  I’ve done the research for you, providing nearly 200 smart recipes with nutritional analyses, serving sizes – even net carb counts.  This cookbook takes all guesswork out of meal planning.
